Holiday snapshot

My plan for today was to blog about our horrendous weekend. But I can't do it. I think after I see our smashed up car I might be able to but for now I'm still proccessing.
Instead lets all have a little look at the fun holiday we've had, much nicer thing to blog about.

park time

Yesterday Michael and I took the kids to one of my favorite spots in town, our big park in the middle of town. Its Oranges version of Sydney's Hyde park, just smaller. we spent at least an hour there, such a nice spot with all the autumn leaves, we taught the boys to have a leaf fight, they could never do that where we live now. The duck pond is being renovated unfortunately so we had to feed the ducks over a fence, not very photo friendly but very laugh friendly James was trying to knock a duck out with a whole peice of bread.


Right in the middle is a huge rose garden and in the middle of that is a sun dial. Jack wanted to know how to read it, what it did, and can he have one?



Charlie was in a smiley mood, even though he s a snot monster at the moment.


My big boys who have decided no other shoes will cut it except their gumboots. Fashion statement extraordinaries.



If I have learnt anything from all the photographers I know, its take photos from above, makes for one chin not two. Is handy to know these sorts of things, yes?
We will definatly be going back before we leave.

On Saturday night I had a proper catch up with my school friends. I'm so glad that were still close and still tell each other secrets, when ever were together its just like we've never been apart.  I didn't realise how homesick I was until we got here. Miss these crazy girls.

oh what a night!

On Tuesday we packed the kids up and everything except the kitchen sink and drove and drove and drove. I can't believe we've never done it before, I always thought driving would be longer, more expensive, and plain difficult, but it was such a good trip. We left at 8pm so after ONE movie we switched the DVD player off and told the kids it was sleep time. By 6am we were half way and the kids had no idea that mum and dad had been driving all night.
We found a fun park in Narrabri to stop for a snack. It was such a nice day I had to get my papparazi on!

On the road again


Ok so this may be over exaggerating just a little. But it feels like this is how much I have washed and packed this week!
Two weeks in my cold cold home town requires singlets, socks, beanies, jumpers, trackies etc etc etc.
In sunny QLD we have not needed any of the above so I've been digging under the beds and buying new things and washing the lot. My lounge room and bedroom look like this picture. We have almost finished packing the car, so tonight after Michael gets home from work were feeding the kids and were out of here, look out cold country were coming!

New Recipe Saturday~Verdict


It doesn't look very good but it was yummo! Were going away on Tuesday night so to empty the fridge I added a few things to the original recipe, diced bacon, gravy granules, mushrooms, 1kg of pureed veg and 2 tins of Italian herb and garlic tomato's.

The end result covered in pizza cheese, my boys love stringy cheese, so why not. My picky eater James wolfed down his then ate Jack's. Gotta be happy with a result like that!

New Recipe Saturday

Shepherd’s pie

Yes I am well aware its Sunday but I have a very good excuse, my beautiful children decided while I was cooking their dinner they would switch some keys on my computer so I couldn't even log on let alone blog. Thank you beautiful children.
So after some resetting and default settings (grr) set I am back to normal.
So this is what I'm cooking tonight with a few slight modifications. I'm going to puree the veg before I add it to the mix and I'll be adding more veg to it so no need for veg on the side. I do love a one pot dish.

Ingredients:


1 tablespoon olive oil
1 onion, chopped
2 medium carrots, chopped
600g beef mince (we like heart-smart)
3 rashers short cut bacon, chopped
8 button mushrooms, wiped and halved
2 tablespoons tomato paste
400g can peeled tomatoes
1 cup beef stock
1 teaspoon dried oregano or mixed herbs
1 cup frozen peas

Potato mash
1kg potatoes, peeled and chopped
50g butter
¼ cup milk
½ cup finely grated parmesan cheese

Method:
Preheat the oven to 180°C. Heat the oil in a large saucepan over medium heat and cook the onion and carrot for five minutes or until soft. Add the mince, bacon and mushrooms and cook for three minutes or until mince is browned. Stir through the tomato paste, tomatoes, stock and herbs. Cover and simmer for 15 minutes, then uncover, and simmer for a further 15 minutes until most of the liquid has evaporated. Add the peas and cook for another couple of minutes.

To make the potato topping, boil the potatoes in water until soft. Drain well and mash with butter, milk and parmesan.
Pour the meat mixture into a 1L capacity ovenproof dish and top with the mash. Bake for 35 minutes or until the potato topping is golden brown

Polly Dolly

I am so in love with this outfit. I have been looking unsuccessfully for a trench dress for years. I don't know if they are made in my size. Luckily in the magical world of polly dolly anything is possible!
This week theme over at Danimezza is Trench. I took the liberty of putting my own spin on it with the trench dress.
This outfit is defiantly for a high tea, a fancy baby shower, special shopping trip. Something fun, not dropping the kids to school.
Beautiful boots, awesome bag, big jewellery and bold make up. Love it.

Happy pants on!

I woke up this morning in a better mood. Thank heavens. I've said it before and I'll say it again. What did I do before blogging?
After tweeting with Rhi last night and deciding we would be awesome today, I actually woke up feeling better. Thanks Rhi.
So even though I still have no idea what my passion is or will be, if I ever have one. I've decided to be more passionate about whats in my life now. Be a better wife (I didn't say housewife), better mumma, better friend, better blog friend (I'm a hopeless commenter, great reader), and keep an open mind while I'm busy being better maybe something will fall in my lap.
Doesn't that sound like a good plan?
So now I'm off to be awesome!

Flat


I am a very lucky lady. I am married to a lovely man. I have three healthy happy busy boys to keep me busy, I'm lucky enough that Michael earns good money so I can stay at home with them, read books, sing songs play silly games and make birthdays fun.

But...
I'm feeling very flat. And I feel guilty for it.

For six years I have been a stay at home mum, and I was happy with that I always had something to look forward to, another baby, a baby getting bigger. Now that were not having anymore babies and Charlie is heading closer to two I think its time for me to find  a passion that doesn't revolve around nappies, nap time and housework.
I'm so envious of Danielle ,Nita and  Kelsey who have found their passion and are getting out there and doing something about it.
I don't have any idea what I'd like to do with my life, but I know I want to do something. So here I am having a whine, a whole post of whining. My goodness someone slap me already!

So if you need me I'll be googling weird stuff and trying no to be sad and cranky at my family. Sorry family.

Let them eat cake!

So for those of you who don't already know, today my baby turned six! I can hardly call him a baby anymore. No soppy post I promise, not yet anyway.
So being a Tuesday Jack is at school and after the dramas he's had a school he doesn't want a party so I made cake to take in for his class. I should now apologise to his lovely teacher for sending his entire class hyperactive and then leaving. Sorry about that.

Boot Shopping

Since my boot disaster I have been on the hunt for a new pair. There are a lot of ugly ugly boots out there. I have found a few I'd love to have but really I just want my old boots back in a better condition. Sigh. I'll get there.

New Recipe Saturday

My name is Kate and I have wife guilt.
I used to make Michael's lunch everyday. Then we had a baby, then we had one more, then you guessed it, we had one more. I fell off the good wife wagon and left my husband to fend for himself. It wasn't pretty or nutritious.
So I've been tying to make sure there is something in the fridge for him, either leftovers or if he's majorly lucky I will spend valuable nap time in the afternoons and make him something. So today I whipped up some ham cheese and tomato muffins. I changed them a little because I didn't want to go back to the supermarket. I used bacon instead of ham and I added a can of corn. I made a double batch and used texas muffin trays insted of normal muffin trays.

Ingredients:


90g shaved ham, chopped
2/3 cup cheddar cheese, grated
3/4 cup self-raising flour
6 cherry tomatoes, halved
1 tbs flat-leaf parsley, chopped
1/3 cup milk
2 tbs olive oil
1 egg, lightly beaten
salt and pepper

Method:
1. Preheat oven to 200°C.

2. Place self-raising flour, salt and pepper in a large bowl.
3. Place egg, shaved ham, cheddar cheese, olive oil, milk and flat-leaf parsley in a separate bowl. Mix until combined. Pour the ham and cheese mixture into the flour and fold lightly until just combined.
4. Spoon the mixture into a lightly greased 12-hole mini muffin pan. Press a cherry tomato half into the top of each muffin. Bake for 15-18 minutes or until golden. Serve warm or at room temperature.

Polly Dolly

Polly Dolly what a good way to spend an afternoon. I have just put about $5000 on my imaginary credit card. It's days like this I am torn about having a credit card. Thank heavens I don't my goodness I would have bought so much unnecessary stuff by now. But bugger it I would like to go buy a whole bunch of crazy stuff. Its called retail therapy for a reason is it not?

 This week is week no.52 of polly dolly, that's right a whole year we have been playing with clothes and imaginary credit cards. Who thought when Dani started this game where it would take her, now she's basically a celebrity. An awesome one at that.

So the little black dress in honour of one whole year of dressing our dollies. I had seven black dresses at one stage, that's a hard decision to make when you have no price tags or size tags. I narrowed it down to this one. I would never even think of picking this dress up I think that's why I love it so. Its nothing I would usually wear. I love the nude shoes and I have it on good authority from Melissa at Suger Coat It that nudes are very in this season. Thanks hun.
That clutch bag was triple the price of the dress I love it, can you imagine getting in a fight with that bag? You would do some serious damage! Smoking hot eyes and lips and some kick ass bangles. Those earrings scare me, fierce is the only word I have to describe them!.
